As I was sipping some of my soup last week that someone lovingly made from scratch it really sunk in what a lovely gesture it is. Especially when you're down or it's one of those rainy days. It's not just about that golden warm broth but the fact someone actually took the time to think about you—make it and deliver it. That feeling somehow gets infused as well.
Something else infused in a good old homemade chicken soup is the healing effects of collagen from the skin and bones of a good stock. Recently I've been really curious about the whole bone broth trend and found many interesting benefits that made chicken soups cult classic under the weather fixer upper status make a lot more sense. Specifically its ability to heal the gut, helping digestion and the immune system. There is even a vegan alternative. Keep the vegetable stock and replace the chicken with lentils in this recipe. For that yummy yellow hue to your soup there is an extra secret ingredient to add which further helps with this soups healing effect. Turmeric. A strong anti-inflammatory that is also said to ease pain and help with depression.

Homemade Chicken Soup
This homemade chicken soup recipe blends my grandmum's traditional recipe with the collagen rich broth bowl recipes of Asia. For the most collagen use a mixture of chicken wings along with whole bone-in breast meat.
Ingredients
- 2 pounds of chicken (wings and breast)
- 1 and 1/2 quarts of water
- 2 Tablespoons green opnions
- 1 carrot (finely chopped)
- 2 stalks of celery (finely chopped)
- 1 teaspoon salt
- 1 heaping teaspoon tumeric
- 1 Tablespoon parsley (chopped)
- 1/2 teaspoon sage, rosemary & thyme (optional)
Instructions
Taking your chicken wings quickly sear in a pan until brown.Add both seared chicken wings and raw breast meet into a soup pot and cover with water. Slowly bring to a simmer (do not allow to boil) for three hours.Add your chopped vegetables and seasonings and allows to simmer for another hour. Remove the chicken and reserve the meat, chopping it up and returning it to the finished soup. Serve hot. Note: The collagen in this soup will cause it to be cloudy which is a good thing. To help reduce the fat it can be refrigerated and the top layer of fat skimmed off the top.
