Espresso Liqueur Recipe
Blending dark espresso coffee and cognac to create a gourmet liqueur that's a swell change from the old stand by gift of bottled wine.
Ingredients
- 2/3 cup very strong espresso coffee
- 1 cup heavy cream
- 2 teaspoons pure vanilla extract
- 1/4 teaspoon ground cinnamon
- 1 Tablespoon powdered chocolate pudding mix
- 1/4 cup cognac brandy
- 1 cup white sugar
- 1/4 cup water
Instructions
Start by making a simple syrup by bringing 1/4 cup of water to a boil in a sauce pan and adding the white sugar. Stir until dissolved. Boil for 10 minutes and then remove from heat and allow to cool.In another pot add heavy cream and gently bring to a boil. Add coffee and remove from heat.Add in vanilla, cinnamon, chocolate pudding mix and simple syrup, being sure to whisk well to fully incorporate everything together. Strain through a fine sieve and then allow to chill in the refrigerator a couple hours to thicken.Lastly pour in the brandy and whisk well. Decant into glass bottles and store in a cool, dark spot to mingle and cure a couple of days before giving.
