- 1 cup pepper jack cheese
- 2 cups Mozzarella cheese
- 1/2 cup pepperoni slices

- 2 Tablespoons extra virgin olive oil

Instructions
Start your BBQ to a temperature of at least 400 degrees.
Start your BBQ to a temperature of at least 400 degrees.
Taking the Pillsbury pizza crust, roll it out on a sheet of foil or on a dark cookie sheet being sure to oil the surface well. For the pizza above I allowed the crust to pre-bake for about 6 minutes in the pan so it would be stiff enough to then flip and grill on the other side. Flipping and grilling the other side took about 3 minutes.Removing from the grill it was time to add all of the toppings and finish it off with some extra virgin olive oil. Place back on the grill, away from direct flames to further bake in the sauce and melt the cheese. About 15 minutes. The result is a surprisingly airy, flaky, smoky crust and lovely, gooey pizza all around! Using fruit woods or flavored wood chips also added a lovely flavor to the finished pie.
