Grilled Poblano Pizza

Grilled Pizza
This summer has gotten off to such a fun filled, crazy all around and extremely hot start that I think we're all just now catching our breaths. While the high heat (feeling over 100 degrees °F daily) remains omnipresent it's been a great opportunity to come up with tasty things to serve guests outside on the grill. This weekends winner has to be this thin crust, grilled Poblano pizza with pepper jack cheese and a liberal drizzling of extra virgin olive oil. Here's how to do it too and a special extra treat at the end:

Grilled Poblano Pizza Recipe
A thin crust, BBQ grilled Poblano pizza with pepper jack cheese and a liberal drizzling of extra virgin olive oil.
Ingredients
  • 1 Pillsbury thin or original crust pizza crust
  • 1 cup sliced Poblano peppers
  • 1 cup black olives
  • 1 cup pepper jack cheese
  • 2 cups Mozzarella cheese
  • 1/2 cup pepperoni slices
  • 1/2 cup tomato puree or pizza sauce
  • 2 Tablespoons extra virgin olive oil
  • To taste sprinkling of garlic powder, oregano and basil or pizza seasoning
Instructions
Start your BBQ to a temperature of at least 400 degrees.

Taking the Pillsbury pizza crust, roll it out on a sheet of foil or on a dark cookie sheet being sure to oil the surface well. For the pizza above I allowed the crust to pre-bake for about 6 minutes in the pan so it would be stiff enough to then flip and grill on the other side. Flipping and grilling the other side took about 3 minutes.Removing from the grill it was time to add all of the toppings and finish it off with some extra virgin olive oil. Place back on the grill, away from direct flames to further bake in the sauce and melt the cheese. About 15 minutes. The result is a surprisingly airy, flaky, smoky crust and lovely, gooey pizza all around! Using fruit woods or flavored wood chips also added a lovely flavor to the finished pie.
