New England Clam Chowder Recipe
Everyone in my family makes this in their own special way and all are divine because they're sticklers for using very fresh, plump clams. Here's a composite of their recipes with potatoes taking the place of cream for a slightly less calorie version:
Ingredients
  • 4 slices chopped into cubes Smoked turkey bacon
  • 1 pint shucked, fresh clams
  • 1 large large onion diced
  • 4 cups diced white potatoes
  • 1/2 cup diced celery
  • 1 quart whole milk
  • 1 Tablespoon butter
  • 1 cup reserved clam liquor
  • 1/2 cup white wine
  • 1 cup water
  • 1/2 Tablespoon Old Bay seasoning
  • salt & pepper to taste
Instructions
Cut up the turkey bacon and saute in a little butter with the celery and onions until tender and bacon is crisp. Add potatoes and add water and clam juice. Bring this to a boil, cover and let cook until potatoes are tender, about 25 minutes. Be sure to stir so potatoes won't stick to the bottom of the pot. Add scalded, warm milk to the pot along with seasonings, reduce heat. Clams go in last for about 3 to 5 minutes and soup will thicken. To make this chowder extra creamy without the fat of cream, cook 1 cup of potatoes, mash or puree and combine with 1/2 cup of milk. Add to your chowder towards the end of its cooking time.
